Chocolate Muffins Recipe

Ingredients

  • 1 3/4 cups Unga wa Dola all purpose flour
  • 3/4 cup cocoa powder (unsweetened)
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda (bi-carb soda)
  • 1 tsp salt
  • 3 tbsp oil
  • 2 tsp vanilla essence
  • 2 eggs
  • 1 cup boiling water
Steps

  1. Sift flour, cocoa, baking powder and baking soda into a large bowl. Add Sugar and salt. Whisk briefly to combine.
  2. Add eggs, milk, oil and vanilla. Whisk well to combine until lump free – about 30 seconds.
  3. Add boiling water and whisk to incorporate. The batter is VERY thin
  4. Pour batter into muffin pan
  5. Bake for 35 minutes or until a wooden skewer inserted into the centre comes out clean.
  6. Allow to cool completely and serve with milk, juice, tea or coffee
