Cake on a Budget

  • 1 Cup Unga Wa Dola All Purpose Flour
  • 1 Cup Unga Wa Dola Maize Flour
  • 3/4 Cup Sugar
  • 1 Cup Milk
  • 1/2 Cup Masterchef Vegetable Oil
  • 1 Tbsp Baking Powder
  • 1 Tbsp Vanilla Essence
  • 4 Eggs

Instructions

  • Light up a jiko with very little charcoal. Now let’s mix our cake batter.
  • In a bowl, beat egg, sugar, Baking Powder, Vanilla Essence till light and fluffy. Add milk and oil and mix till well combined. Add in your flour and mix to combine.
  • Take a smaller sufuria, spread margarine or oil to prevent the cake from sticking onto the sufuria. Pour in the batter.
  • Take a larger sufuria put 3 flat stones just enough to raise it from the bottom so it’s not directly heated. Cover it for 5 mins to create an oven like temperature inside. Remove all the charcoal and place ontop on the cover. Put in your batter and cover it for 30-40Mins or till it passes the toothpick test.
  • Allow to cool before removing from the sufuria.
  • Serve with your favorite hot drink and enjoy!
