Dola Pillowy Soft Cookies

  • 1 Cup Unga Wa Dola All Purpose Flour
  • 1 Tsp Baking Powder
  • 1/4 Tsp Salt
  • 1/4 Cup Margarine/Unsalted Butter
  • 1/2 Cup Milk
  • 2 Eggs (Room Temperature)
  • 3/4 Cup Castor Sugar
  • 2 Tsp Vanilla Essence
  • 1 1/2 Tsp Dola Vegetable Oil

Instructions

  • Sift Flour, Salt and Baking Powder and set aside.
  • In a small bowl, add butter/margarine into milk and warm till it melts. Add in vanilla and oil into the mixture and set aside.
  • In another bowl, mix your eggs and sugar for 5-8 Mins till light and fluffy. Fold in the sifted dry ingredients mixture in 3 batches carefully folding in till it combines. Do not over mix. Then add in the milk mixture in 3 batches carefully folding it in to combine. Do not over mix.
  • Pour it in a greased baking tin and bake in a preheated oven at 180° for 25-28 Mins or until it passes the toothpick test.
  • Allow to cool and slice to desired shape. Serve with some berries and your favorite hot drink. Enjoy!
