Heat oil in a pot and add the onions. Cook until translucent. Add the garlic and cook for another 1 minute.
Add the tomato paste and cook it for 1-2 minutes. Next, add the tomatoes, turmeric powder and salt. Stir and cook for 5 minutes.
Stir the meat into the tomatoes, cover the pot with a lid and cook for 20-25 minutes. Set aside while you prepare the chapati’s.
To make the chapati’s: In a bowl, mix together all purpose flour, oil and water. Knead for 5-8 minutes and then place in a bowl. Cover with a kitchen towel and let rest for 15 minutes.
Dust your working surface with flour and roll a small portion of the dough into a round and thin chapati. Place it onto a hot pan. Once you see bubbles form, flip it over and spread 1 tsp of oil over it. Flip it around again and spread another 1 tsp of oil. Flip it around one more time and take it out.
o make an omlette: in the same pan, heat oil. In a bowl, use a fork to whisk together egg, bell pepper and salt. Pour this mixture into the oil and spread using a fork. Cook for 1 minute and then flip it over. Place a chapati on the omlette and press it down for 30 seconds.
Take the chapati and omlette out onto your working surface, spread a layer of the beef mixture and top with coriander leaves. Roll it up and serve.
