Dola Ugali Omelette


  • 1/4 cup leftover Ugali
  • 3 eggs
  • 1/2 tomato, chopped
  • 1/4 onion, chopped
  • Chopped coriander leaves
  • 1 tbsp milk
  • Salt to taste
  • Freshly ground black pepper
  • Butter for cooking


  • In a bowl, tear into pieces the leftover ugali. Add the eggs, tomatoes, onion, coriander leaves, salt, pepper and milk, and whisk.
  • Heat butter in a pan, scoop half of the mixture into the pan and swirl it around. Let cook for 1 1/2 minutes on each side. Fold and serve with toast, sausages and bacon for a full breakfast.
