Mahamri na Viazi vya rojo

  • 3 cups flour
  • Half a cup sugar
  • 1 tbsp plain yoghurt
  • Half tsp ground cardamom powder
  • 1 tsp yeast
  • 1 tsp vegetable oil/ghee
  • 1 to one-quarter cup warm milk or coconut milk
  • Oil for frying
  • 5 medium sized Potatoes
  • Salt to taste
  • 2-3 Tomatoes
  • 1 Tsp tomato paste
  • 1 tsp garlic
  • 2 green chillies (optional)
  • 2 tbsp oil

Instructions

  • Add everything to the flour except the warm milk/coconut milk
  • Mix for a few minutes then add the warm milk/coconut milk in bits as you continue to knead
  • Knead until the dough is nice and soft.
  • Cut into 7 or 8 pieces and shape into balls.
  • Cover and let rise.
  • Roll each ball and cut into 4 quarters and let it rise for 15 mins.
  • In a karai add the oil for frying and place on medium heat.
  • When the oil is hot, add the quarter and start frying one side and flip to the other side, remove from heat when its golden brown.
  • Peel the potatoes and cut them into cubes.
  • Boil the potatoes with salt. once ready, drain the water.
  • Blend tomatoes, garlic and green chillies (optional).
  • Let it cook for few mins then add the potatoes.
  • Lastly add lemon juice or tamarind (ukwaju)
  • Serve hot with tea, mbaazi or viazi vya rojo
