In a bowl, combine Unga Wa Dola All Purpose Flour, Corn Flour and Salt.
In a separate bowl, add in your butter/margarine and powder sugar and mix till light and fluffy. You can mix with an electric mixer or a whisk. Add in vanilla essence and mix to combine. Add in the flour mixture in 2 batches, then combine to form a dough. Be careful not to knead your dough, as the cookies will turn out dry.
Cover and put the dough in the fridge for 15 mins.
Roll the dough to 1/2” and begin to shape your cookies as you place them on a lined baking tray.
Bake the cookies at 170° pre-heated oven for 10-12Mins. Once ready, allow to cool. You can choose to dip the cookies in chocolate, dust the cookies with powdered sugar or just leave it plain.
