Strawberry Jam and Coconut Cake

  • 1 1/4 Cups of Flour
  • 1 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 4 Eggs
  • 1/2 Tbsp Sugar
  • 1 cup Melted Butter/ Margarine
  • 4 Tsp Natural Yoghurt
  • 1 Tsp Vanilla Essence
  • Jam
  • Desiccated Coconut

Instructions

  • In a bowl mix 1 1/4 Cups of Flour, 1 Tsp Baking Powder, and a pinch of salt
  • In a different bowl mix 4 eggs. 1/2 cups of sugar and beat for 5-7minutes till fluffy and 1 cup of melted butter, 4tsp of yoghurt, 1 Tsp of vanilla essence and mix again
  • Add in the flour mixture and mix till smooth
  • Grease your baking tin and the cake batter
  • Bake at 180 degrees for 30-35 minutes
  • Apply a coat of fruit jam to the cake and sprinkle the desiccated coconut too
  • Slice the cake and enjoy it with a beverage of your choice.
